Evaporation is the process whereby atoms or molecules in a liquid state gain sufficient energy to enter the gaseous state. It is the process by which liquid is converted from its liquid form to its vapour form.

When wind blows over a surface covered with water, evaporation occurs. Evaporation is the process of water molecules gaining enough energy to escape the surface of the water layer. Wind blows the surface molecules giving them the energy necessary to escape. More molecules migrate to the surface and hence water molecules escape. The rate of evaporation is also increased by temperature which is why watering a garden on a hot summer day can be a waste of water. High temperatures give the surface molecules more energy to escape.
